Thai Kitchen Recipes

Lime Cucumber Raita

Serve this cooling sauce with spicy curry recipes.

1 cup (250 mL) plain nonfat yogurt

1/2 cup (125 mL) Thai Kitchen® Coconut Milk

1 cucumber, peeled, halved, seeded and cut into 1/4-inch dice

2 tablespoons (30 mL) lime juice

1 tablespoon (15 mL) palm sugar or granulated sugar

2 green onions, thinly sliced

1/4 cup (125 mL) finely chopped cilantro

1/4 cup (125 mL) finely chopped fresh mint or basil


MIX all ingredients in medium bowl until well blended. Cover.

REFRIGERATE at least 1 hour to blend flavor.
