Peanut Carrot Sauce

Combining sweet, spicy and sour tastes with the crunchy textures of carrots and peanuts, this sauce makes a perfect accompaniment to spring rolls.

1/4 cup (50 mL) rice vinegar

1/4 cup (50 mL) fresh lime juice

2 tablespoons (30 mL) Thai Kitchen® Premium Fish Sauce

1 tablespoon (15 mL) palm sugar or brown sugar

1 teaspoon (5 mL) minced garlic

1/2 teaspoon (2 mL) Thai Kitchen® Spicy Thai Chili Sauce or 2 Thai chiles, seeded and minced

1/2 cup (125 mL) grated carrot

1/4 cup (50 mL)  roasted unsalted peanuts, coarsely chopped


MIX vinegar, lime juice, fish sauce, palm sugar, garlic and chili sauce in small bowl until well blended. Cover.

REFRIGERATE at least 1 hour. Sprinkle with carrot and chopped peanuts before serving.

Makes 1 cup.
